I just had it for the first time today at work and I did not like it at all. Maybe it was the way it was cooked but It didnt taste right to me. For those wholike it, how do you guys cook it? My boss went hunting last week and gave me a whole freakin slab of it

I've had venison burgers in the past and thought they were tasty. I'm not sure how a steak would be, but I'm a carnivore, I'm sure I would likeit. I look forward to trying all types of game in the future. Wild Boar, Ostrich, Buffalo, etc.

Plenty of times. Its has a gamey smell to it but it tastes great.

I don't think you've had good Deer jerky. I know "good" is relative but a cousin of mine made some smoked Deer jerky once that was absolutelyamazing.

Is it true that Bear meat is rough? Also what would you say Buffalo taste like?

Love me some venison...My pops used to have a smoker and would make jerky all the time. Absolutely delicious.

Deer (venison) can be very tasty. A couple of things influence the taste of the meat. For starters, the diet of the deer is important. Deer that feed on corn, beans, and such taste the best (Midwest venison is highly regarded), while deer that are primarily grazers tend to be a little less desirable. Also, it ishelpful for the deer to die immediately when harvested. If the animal is able to run after the shot is made, the adrenalin pumping through the muscles cantaint the meat a bit. A clean kill hardly, if ever, tastes gamey, but a kill that is has to be tracked to its death spot rarely tastes good.

As for preparation, ground venison is best used in dishes that involve a tomato-based sauce, such as chili or a pasta dish (spaghetti and lasagna are bothgreat). If you choose to make burgers, be sure to mix in a bit of bread crumbs and add a little ground pork. Venison is virtually fat-free, so it does not holdtogether in a burger well. The added fat from the pork combined with the bread crumbs will greatly improve the stability of your burgers.

I have also smoked both deer ribs and tenderloins. They are both very good. I used a spice rub that I use on beef - kosher salt, black pepper, hot Hungarianpaprika, cumin, and garlic powder. Both the ribs and tenderloins were smoked for about 5 hours using hickory wood in a cold smoker rig. Delicious!

Venison is also really good to use in making breakfast sausage. You might ask your friend if he had any made. As was previously stated, jerky is also awesome.Steaks and chops are awesome, but it is important that the deer had a good diet and died quickly (see above).

Buffalo is better, but for both it can come out horrible if you cook it too long.
I never go over medium.
