This is also something I keep a word document for. I have ten Thank You Letters ready to go at any moment.
The hardest part about thank you letters to me at least is using different words and structuring your sentences differently. You never want to end up in a situation where you have to do multiple interview sessions or meet with more than one person in a day so when you're writing letters you're sending everyone a letter that sounds exactly the same, thats why I keep the word document handy and try to add to it whenever I can.

Thank you for taking the time to speak to me today regarding the _____________ position. I learned a lot about what the position entails during our conversation, along with what skills are needed to succeed from you and am confident that I would be a great fit and quickly add value to your team.
I will be sure to keep in touch with any questions I may have and I look forward to hearing from you in the future.
Throw something in there about the holiday weekend too, I did that when I had an interview on Memorial day, thought it added a nice personal touch to it.
@TimelessFlight Adding that to my doc. Repped.
