I can actually make the tonkotsu/miso Japanese Ramen at home.

It takes a long time though... but I think it tastes good. Almost restaurant quality. I found a recipe online (modified it a bit myself too for a more Korean palate).

Pho and Ramen are some of the more accessible entries into ethnic dining. At least no one was trying to steer you into eating Mondongo/Mofungo. If I close my eyes and think about it I can still smell it in my mind, and it makes me gag a little.
 
 
Ramen > Pho IMO... Toto, Ippudo, Hide-Chan are IMO the best ramen houses in nyc

My mom used to cook mondongo for my dad and his buddies when they were all hungover from watching qualification matches, by the time I was born she'd stopped trying to make me and my siblings eat it.
 
Not everyone likes Plantain but I loved that dish. My buddy is puerto rican and his mima made it for us while we were down there in like 2000. He wouldn't eat it but I was all about it.

pad kee mao is my second favorite food. I like it with chicken, scrambled eggs, and extra spicy to the point where I'm almost crying. It hurts but it tastes so good.

Whenever my girl tries my Dunkin noodle she immediately regrets her decision. The local place we go to laughs because their spice level goes up to 5 stars and I regularly order 6, 7, or 10 stars just to get the point across. I challenge Indian Food places and they laugh at me then are amazed that I eat (and enjoy) the whole dish.

My parents are from Honduras, dad moved here in 61 did a 4 year stint in the Army, then got married, they moved together in 67, dad retired in 05 and my mom in 10 and they moved back to their hometown to a house they built near the beach. I haven't been to their new place, and the last time I was there was back in 89. Trip just costs too much for the amount of vacation time I get a year.

I freak her family out all the time. They challenge me to do stuff and without a blink I do it. Silly crap like eat the jalapeno. I'm a skinny dude but I'm always eating up everything. Can't wait until my metabolism slows down (not).

Yeah that was the worst year of my life. I went from being like 120-135 from high school until I was about 23 or so, then BOOM things slowed down and suddenly I became a big fattie.
 
Wait I'm sorry I didn't mean mofongo, that actually sounds kind of good, I had it confused with Menudo which is the Mexican version of Mondongo. A Beef Tripe based soup.

Mofongo has been on my list of stuff I want to eat if I ever find myself in PR or in a community with a lot of Puerto Ricans.
