Question: Would early 2000's retros be ok to wear?

I just purchased a pair of 2000 Infrared VIs. Would they be safe to wear every now and then, or is there a high chance that these would fall apart within one wear?

All depends how they were stored.  There's a thread somewhere that explains how you can tell if they are wearable or not based on how the midsole feels.  More than likely if they are DS they will crack or separate on you when you wear them.  If they have been worn there's a better chance they are still wearable.
 
You'll get both yes and no responses. Some hold up better than others. Are they worn or DS? I personally wouldn't risk it...especially if they're DS. These and the others with similar midsoles are prone to cracking/crumbling. Too many horror stories.
 
They've been worn a few times, but look really well taken care of (could pass for VNDS). I guess I will have to update this thread once I receive the shoes.

If they're in the condition that you say they're in, I say go for it. I've been wearing my 01 black/red XIs since I got them from Finish Line 12/15/2001.

but those are different midsoles...all you're looking at on the XIs is sole separation, which can be a quick fix.
 
From experience the vi's and iv's are the most prone to crack and crumble due to age and storing techniques. Use the fingernail test. Push in the midsole and see how fast the foam goes back to its shape. If real quick, you're ok. If real slow, uh oh!
