So has anyone figured a way to tone down the Shiny parts without destroying the shoe? I'd love to get these for the winter to beat up and want not. They will look better with age but the Shiny parts killing me unless it's not that bad in person

I'd acetone it, then go over it with matte black.

Krylon #1306 Workable Matte Fixative. You can find it at any crafts store, big box store, or online.  Just pull the laces out, cover the tongue with Suran wrap & tape tightly I would tape up the midsole. ( just my taste) I think I'm just going to let it shine. I'm hoping it wont be too shiny in person. Those studio lights are pretty bright. I have some other tips if you're nit picky.

Or you could just use acetone and re do the shoe like @AirThompson  suggested. Just depends on what you're looking for.
