What's the main difference between mids and phats?

Mids are simply mid-cut shoes, the height sits between the Low and the Hi. Mids are relatively new - I think the AJ I retros in the early 00s were the first to feature the mid-cut whereas the OGs only came in Low and Hi cuts.
Phats should have thick, padded tongues and elastic straps holding the tongues on either side. I haven't seen or held a Phat AJ I retro in the last 3-4 years so I don't know if they they are still doing it.

I just ordered a pair of AJ1 Mids from Footlocker...let's call them the "semi bred" colorway LOL. Anyway, they are awful. Stiff AF and there's very little cushioning with the insoles they come with. They look great...no flaws...looks like they were made halfway decent...but I can not recommend this shoe. Save your money and buy something else.
