they could always send the mountain in to set it off. they might not be trying to set the whole city on fire either. Jamie told Brienne in season 4 that there are caches of wildfire all over the city, including under the sept of baelor.

In regard to the Blackfish off screen death, the writers decided that the emotional focus was the scene between BF and Brienne and that moment they shared was more important than showing his actual death. 

Edit: Now that I think about it. That's probably the same reasoning they used for Stannis's death.
