I just don't get why they would jump to a Supes vs Bat if they are using Nolans films as the origin.

The Nolanverse aint the origin. But they did make it an older batman not to take away from the Nolanverse imo

Can we stop this Supes could have done this, done that, etc... especially if those changes will completely ruin one of the best comic books ever written?

So it'll mostly be superman and batman not being besties when they first meet, having some conflict / fighting, then finding some common ground and hug it out like bros? Maybe it'll be like a serious version of the movie Step Brothers.
