Because there are too many options that come from doing it. Basically sets up a situation where you have a 33% chance to guess what they're gonna do and even if you guess right now you have to properly defend it.

Of course I'm talking about the most basic choices but, pass, shoot above the screen, drive.
Within those choices comes the "unguardable" aspects of the pick and roll. Drive in then kick out, drive in then pass back to screen setter if doubled, ect...
Basically an answer to every situation if the ball handler can read and/or reacts accordingly

Yup, scheme wise and personnel wise the Heat do it about as best as you can. Bosh is just about the best big to have as he can hedge hard and recover quickly.
