I just have a crappy henckels santoku at my house that was left here. I put a nice edge on it and gets the job done.

If I'm going to be cooking a lot I'll bring my knives home. I have a suisin chef's knife I use for everything.

No doubt. It's no where near worth it for me still. I like the element for the VB and its also made in the US. I have no real need for accessories and I don't dab.

Yeah hopefully someday me and my partners can get a restaurant. Our truck will be up and running in a few weeks. We'll establish ourselves that way. I have no idea what to expect with this truck. They are all doing really well here so hopefully we kill it as well.

i got a boy who works for a pizza truck in new haven

they are doing great.......they actually just bought a vacant spot for an actual restaurant now

food trucks can do very good
 
Nice. I've heard of some people doing that here as well. I know one lady just opened one down the street from our prep kitchen.
