I am considering a career change, and becoming a pilot is very intriguing.

Not one, but used to always want to be one. If you're Still eligible for the military I'd go that route. Paid experience and you land a Sr position when you get to civilian life. 6 figure school loan debt to start off at Jr position at a commercial airline making 25k if you're lucky is not the move.
