Honestly Rome is like disney world so be prepared for hella tourists. If you don't want to do touristy **** then I would honestly skip it. Rome was cool for the history. Everything else was kind of blah. There was this amazing pizza place though called Pizzarium, it's a bop from the vatican so it's not really reached by most tourists but it's good.
As far as Euros go. I honestly would not convert my money ahead of time for multiple reasons. You can use your card most places and can actually choose to pay in usd instead of euros. If you have time, which it sounds like you do, get a capital one 360 card. No foreign transaction fees and it gives you the opportunity to have a backup card unless something goes down.
