Im going to for a similar reason as well. But my primary reason is my name is too African fro the west. From what I hear that actually increases your chance of employment but IDK from experience. Tho I am guessing you dont have an african name so it shouldnt increase your chance but it shouldnt hurt.

OP- I did the exact same thing. I legally changed my last name before I graduated college so that my mom and grandma's last name would be on my diploma. My dad bailed when I was in middle school and I had grown up on my mom's side of the family anyway. I felt it was only right that I carry my FAMILY name into my adult life. It wasn't hard at all to get a job because you're issued a SSN card and other legal documents. It's just a very lengthy process because you have to run an announcement in the news paper for a month or so.
