The pack always looks like it has meat as thick as a double slice of bologna..

Ive never smoked fish but have wanted to smoke a fat peice of salmon.

Grilled fish is the **** tho. If you dont have the lil thing to keep it all intact tho it can be a pain in the ***.
 
Anyone in here ever cooked up some pork skins?

A local butcher sells just the raw pig skin already cleaned/scraped/dehaired. I bought a pack and cut the skin sheets down into smaller pieces and boiled them for about 40 minutes to render the meat. Took out the skins and drained them. Tossed with salt and Weber Dry Smoking Rub and put onto charcoal grill. Cooked over indirect heat for about 90 minutes, turning occasionally. I did place them over direct heat for around 10 minutes just to achieve a little char on them.

They turned out really good imo. I wish they sold them with some of the fat/meat still attached like you would get if you had cooked your own hog for many hours.

At these mexican meat markets in my hood they sell the pig skins wit fat on em still but fried. Them **** wit hot sauce are legit.
