View media item 2307818Pork butt I did recently on hickory and apple mix. I smoked for about 8 hours I injected it with apple cider vinegar and rub mix and put it right on so the vinegar didn't have to much time to get it to soft. Turned out well not sour at all good flavor I'm gonna try it with apple cider next see what I like more.
 
Good thing he's got 10 months to practice too.

I'm doing the same - i said I'd do a turkey for Christmas but I want some time to get my smoker tuned and some experience before we have Chinese takeout on Christmas Day so it'll be next year.

Just fitted 2 grill level thermometers tommy smoker so it will be interesting to see how they work. I'm hoping to do something next weekend. Probably just chicken to break it in.

Did you season your smoker first?
 
Anyone use mustard on your ribs before applying rub? I typically don't but I've seen several people do it. Can you taste the mustard afterwards?

not in ribs. Occasionally ill use it on a pork butt. I dont think its worth it unless you are worried about the rub not sticking. You cant taste it

No you don't taste the mustard it's just to hold more rub on. I don't use it because I get enough rub to stick to my ribs.

Only on pork ribs, but I tend to just use oil to make the dry rub stick better.

For beef ribs I use Louisiana hot sauce.

Yeah, did that a few months ago - it's been wet and cold here since then though so I've not wanted to spend the time outside!

I hear that lol. I put mine under my patio roof I'm always afraid when I smoke that neighbors will think my house is on fire lol but that smell comes out and they know damn well that's some fine BBQ lol

I cant taste it tbh..I do it sometimes

I remember wathing Pitmasters and they were frowning upon it...well I think Myron was :lol:

My favorite myron line is when they did that cookoff at johnny triggs at the end of s1. Johnny had gotten a trophy for the winner and myron said he needed cash on the line. He "doesnt fire up his smoker for less than a grand" then he said "take the damn trophy down to the 4-h club and give it to them" :rofl:

bruh, he was not budging until some real money was put up..I thought he was joking at first..he was not playing :rofl:

anytime when he wins and when they give him the big checks he always asking where the real one at? :rofl:

Mac's Speedshop in Charlotte a few weeks ago:

Oklahoma Joe's (gas station location) in Kansas City a couple weeks ago:

Corky's in Memphis last week:

Shockingly, and it's hard for me to say this because I absolutely love Ok Joe's (been three or four times), but they weren't hitting like normal this time around. 1 = Corky's dry rub, 2 = Mac's, 3 = Ok Joe's.
