^ going to follow the traeger recipe. Which consists of red wine vinegar, lemon, evoo, thyme, garlic etc.

Lamb is pretty tasty. I don't eat beef or pork and recently tried lamb at Texas de Brazil. This will be my first time cooking it
 
Best way to get crispy skin is to remove the skin, then scrape the fat off from under the skin and rewrap. Tedious work but worth it if its that important to you. Works best when smoking but will do on the grill if you got a technique down.

lamb shank tho :\ too gamey imo


to me lamb can taste like buttery, more delicate but more flavorful in a good way pork

Just reverse seared a couple of rib eyes - delicious. I put them in my smoker until they were 115° and then moved them to a grill on top of the fire basket for a few minutes until they were a nice golden brown - I like a medium rare but with more color on the outside so that worked really well. Really tender and just how I like it.
 
Looking for a hookup of any links/vids I should be following as a 'smoking for dummies'. A buddy of mine has a smoker and it's collecting dust at his parents house as he's moved out to an apt. He said if I want to leave it by my yard feel free.

And if I ever use it, I definitely would plan on being home all morning/afternoon.
 
Is that trager loud? I see videos with the lid open and it sounds like a warehouse fan.
 
I need to seal around the lid of my smoker better - I want some of that stick on tape to go around the door but I can't find any here. Anyone got any suggestions for online in the US? My wife is visiting her sister in a few weeks so she could bring it back then.


Amazon, search for high heat tape gaskets or something like that and you will see tons of options.

Thanks, turns out if you Google Oklahoma Joe gasket you get this kit - just ordered one with the gasket and the latches. That should make it really smoke tight - I used it over the weekend and you could really see it leaking especially around the bottom - it needs pressed down to get a good seal so that will do it.

I have a cheap gas grill that I need to replace. Are the Webbers really worth the $? I have a Webber kettle that I love using, but also want a propane grill for when I just wanna throw on a few hot dogs etc...

weber will probably last longer. I like my weber gas grill but i sometimes wonder why i spent sk much on it. I would probably go cheaper if i had to do it again.
 
Dont knock people that use gas grills, but me personally i just cant do it.

I DO want a griddle and would rather use that then an actual gas grill.
 
i use a gas grill for weeknights...doesn't take long to heat up at all...can grill a pack of thighs in no time...i save the coals for weekend slow cooks...just my 2 pennies...
 
I've always been a gas grill user. As I mentioned on the last page, I may have access to a smoker all summer, but I'd only use it if I know I'm gonna be home all day.
 
I guess im too picky. I dont like lighter fluid either. Just charcoal and wood for me.
