I'm getting some denim tailored and I want a leg opening where the jeans don't cover my kicks

Depends on your height and build.

I'm more "boxy" (5'10" 190lbs) , so I get an 8" opening.

I'm fairly fit ,I also have a pair of jeans that are around 6" but even that seems a little bit to big. I'm 5'7 and I wear a 32x30. My jeans also have a really stacked loook at the ankl, maybe cause of the length? I usually wear tapered jeans as well.

Stick with 6" tell them to taper from the knee down. What size shoe do you wear?

I do a 6 inch taper.
My tailor has me put my jeans on than I just tell her where I want it to start and she puts pins down the side of my leg so they fit perfectly. I suggest doing it this way so you can get them to fit exactly how you want it.
If you just tell them from the knee down it could end up looking odd because the taper might be too extreme.

Depending on the jeans I start the taper at different spots.

I'd get 6". That's what all my jeans are and we wear the same shoe size.

However, VERY IMPORTANT, if you are altering dress pants/slacks DO NOT go below 7". Learned this lesson the hard way.

Would the 6" shrink drastically once I wash my jeans?

explain please. I need to get all my dress pants tailored

Size 8 shoe size?

It's prolly best to get at most a 2" leg opening.

Any bigger and your ankles will be swimming.
