After thinking about it, BBQ'd Fall-off-the-Bone Ribs are my #1 seed for grilled/smoked food...

But da ribs will be sous vide, boiling in its own rib juices and whatever seasoning I put on it only. :lol: :pimp:. Will try to remember to post pics/results.
 
I'm tellin' you...my neighbor will be out there putting meat in the smoker at 5-6am...if you leave your windows cracked, the heavenly smell permeates throughout the crib, and the drool starts up shortly there after :lol:

I love smoking ribs but never used a smoker.  My trick is offset smoking, which is just putting the charcoal or wood on one side of the grill and putting the meat on the opposite side, with a pan of water under the meat.  Ribs always turn out perfect.  

The rub i use is actually a store bought rub from Gordon Food Service and i just rub them with brown sugar before the rub, and let that sit overnight.
 
^ Yea Ive been watching a lot of youtube videos of people smoking with a regular weber that were impressive. I'm planning to try my hand at smoked beef ribs.

I'm not in a rush to get a grill though .i think the one I have is fine. I lost the smaller grate to the lower section of it though :/.

I do this with pimento wood under the meat for jerk. It's fantastic, just like home.
 
If you are a ribs kinda dude and went to fat matts you would be disappointed...their ribs are boiled and usually over cooked hence it sliding right off the bone...it's a neat spot that has character but far from being the best BBQ spot in Atlanta
 
I dont see why dudes complain about smokin in cold weather.

Thats when you learn your pit even more.

You get more creative and your game jumps.

I been smokin/grillin since before i could get a drivers license.



If its too cold like 20 and below ill use my egg depending on what im smoking and take my *** bacK inside while it does its thang.


I do want to get a pellet smoker like a trager. But idk if it has the same effect on the final product.

Joints were on point and I'm a rib guy. Flavor was phenomenal. 

What do you recommend in Atlanta? Fox Bros trash. Sweet Auburn good.

TRUTH!  I've had better ribs at Famous Daves, and hell even Fridays.
