Honestly people overthink first dates. Whats more important is conveying to them that you can hold a conversation. You can do fun things on a date and still be with a boring person. That's why simple dates like drinks or coffee will always be the best choice so you can get to know someone a bit more.

First dates in winter are the worst though. I would say keep the first one simple, get some drinks first so you can talk face to face and feel the vibe. If there is a mutual attraction, and conversation is good then get some food and if time allows end it with a movie. The most important thing for the first date is to see if you guys have a vibe, and can converse about various topics. Once you've accomplished that, the remaining dates can be elaborate.
You don't wanna spend too much money on a chick you have no chemistry with.
Save the real creative stuff for after you guys build a bond. Just my 2cents.
