I had a surplus of tortilla chips in the house so I tried to do homemade Chilaquiles. Kind of feeling defeated now because all the on-line recipes I looked at said "so easy", but I totally botched the chip part and turned them to mush. I'll do better next time.

This is very true.

If I want guaranteed good, solid fried chicken wings, a Chinese spot usually never fails.
