Pastry Shop pignoli cookie prices are sky high…I’ve been wanting to try to make a variation of pignoli cookies with pistachios or rainbow cookies with pistachio paste instead of almond paste.
I went online and looked up how much pistachio paste costs. I’m good on that.

Yeah last time I copped in Brooklyn they were $30/lb.
I made a big batch at home last year and everything cost me $70 to make enough to last 2 weeks. I couldn’t even buy the pistachio paste to make the cookies with $70.
