Anniversary dinner. Took my wife to the best steak restaurant in town.

Dude was probably the best waiter I ever had. He was knowledgeable, funny, and checked up on us regularly. Then the kicker, when we were ready to get our check, he pulls this out and says happy anniversary, guys.

Needless to say, I tipped VERY well and will be writing a good review for them, especially our waiter.
 
Has anyone ever made Poke before?
I got a salmon fillet and I don't know how to prep it.
Do I need to cure it or brine it or anythining like that?
