1. Diamonds from Sierra Leone (complex as %#*#)
2. Through the Wire (of course)
3. Stronger (sick sample)
4. Two Words (love the choir!!)
5. Say You Will (simple but so sick)

Honorable mention: Welcome to Heartbreak, Good Morning
 
It's really hard to limit it down to 5 beats, but my favorite Kanye beat is definitely "Welcome to Heartbreak". I've played it to death since it came out and I'm still not tired of it. And both versions are great to me and have different "feels" to them.
