Couple of things going on here. In the earliest days (late '60s) the company was known as "Blue Ribbon Sports", and they were the sole importers of Onitsuka Tiger shoes into the USA... Phil Knight handled the business side, and Bill Bowerman fed them designs and innovations. The Tiger partnership fell apart in 1971, and Blue Ribbon Sports was forced to come up with a new identity, new logo, and figure out how to build shoes on their own. Phil Knight wanted to call the new company "Dimension 6", after some coaching philosophy about six different aspects/approaches to winning, or something to that effect, but his proposal was decisively shouted down in favor of Jeff Johnson's suggestion of "Nike", the Greek goddess of victory. So the name is partially a nod to this nugget of early Nike history.
And yes, the other reason is a nod to the six main sports that (very broadly) make up the bulk of "action sports":
