Why do we say "bless you" when someone sneezes?

Yup, that's the official reason why you're "supposed" to say it. Some people are just taught to say it without knowin' whatthe hell is goin' on [obviously].

And in Spanish, they say "salud" which also means "health."
 
Supposedly your heart stops for a millisecond.. but I think that's proven to be false.

Do you know anything about Romance languages? If you speak ONE of the following: Spanish, French, Portuguese, Italian, or Romanian...youimmediately know how to speak the other 4 in said list. Okay maybe not, but the languages are so similar.

The reason I heard has to do with the Bubonic Plague that hit Europe back when.

Sneezing was a sign of almost certain death and hence the reason people would offer their blessings.
