I've been a vegetarian for 3.5 years. My ex is a carnivore, but still LOVED this dish especially:

Vegan Chili: (Lol excuse my awful instructions i just cook by the seat of my pants)

Put a drop of oil in the bottom of a skillet, soften onions and garlic.
Add a thing of crushed tomatoes. / tomato Paste
Add some water (you're gonna simmer for a while so it's gonna reduce)
Season that up to taste with oregano, vegetarian bouillon, salt pepper
Add some heat! Cayenne, hot sauce, chili powder, whatever.
Add kidney beans, cannelinni beans, lentils, and brown rice
Simmer that **** until the lentils and rice are tender and the consistency of the chili is thick. Like won't slide off a spoon thick.

I served it with tortilla chips and it was delicious. Remember to keep tasting it as you go and season accordingly. It has such a hearty, meaty feel and it is full of protein.
 
Made some chipotle "cheese" sauce and nachos.

And here's some brussels sprouts, pasta, and some homemade tomato sauce


Never thought to put brussel sprouts in spaghetti, sounds delicious.


What is your favorite "cheese"?

Let me tell you, store bought fake cheese is not very good IMO. The best fake cheese I've made was probably that sauce and a mozzarella. I also made a gouda and a cheddar, but they grew mold fast and I had to toss 'em. They tasted good while they lasted though.
 
I've noticed that about store bought fake cheese. How long did your homemade cheese last before it got mold?

Think im going to start making my own rice milk. Looks really simple, just wonder how I could make it a little denser.
 
Took about a week or so. I'll probably just eat it faster if I ever do it again.

I've never made rice milk, but you can try adding less water.

Vegan seitan steak with sauteed onions, mushrooms, and garlic. Sides of steamed broccoli and whole wheat linguine. Needed a steak knife for this. Best seitan recipe I've found so far.
