Just delete it. It's a stock keyboard you can always re-add it in the list of keyboards.

Delete is the wrong word, you're just removing it from your chosen list of keyboards. You can't "delete" the stock keyboard and when you enter passwords in apps or online you'll have to use the stock keyboard anyway (will appear by itself)

Try restarting your phone, that should fix it.

One bad thing about Gboard is that it doesn't have voice-to-text. I miss that feature about the stock keyboard

If you delete the app you can't use the keyboard. And as far as I know it's English only
