Are you using enough chARCOAL?

I used to have that same issue, then I realized that I wasn't using enough.

I try to use about 40 pieces.

Also, open your vent a little. You need oxygen to feed that fire.

Also, invest in a chimney starter if you haven't already

Finally, there are lots of master grillmen on YouTube. Study their videos.

Wood chips and water just to keep it moist and smokey flavor?

On the left side is a tin foil pan with water and orange peels to create moisture

On the right side are charcoals and a few pieces of wood chunks. Wood is for some good smokes!

I'm familiar with the technique, but I just throw my chips in with the coals.
I put them on the outside of the coals so they won't burn fast.

Had the same problem, but I knew there was some help out there for us fire challenged people.

Yea, I do the same as you. My wood is on the same side as the coals but I use big chunks of wood instead of chips.

Anyone using lighter fluid to light their coals need to be banned. The Weber chimney has been life changing and it's very simple to use. Couldn't imagine not using one. If needed add more coal to the already lit coals for long grills like ribs or chicken.

I use Kingsford but the competition coals. Same price I think as the regular ones and they burn longer.

I highly suggest the Weber Smokey Mountain for a smoker.  Just check it out on Amazon, reviews speak the truth.  Fill the chamber with kingfords coals with couple chunks of oak/hickory and fruit food and it holds a steady heat for about 18 hours.  Have done spare ribs, pork shoulder, brisket multiple times with great success.

This is a great first smoker, was my first.  Offset smokers consume fuel like no-other and are difficult to hold a steady temp.

also do you get your wood chips from Home Depot and where are you buying your meat at in DC? Local stores like Harris Teeter or you going to Farmer Markets/Meat shops?
