The thickness of the final product and how much liquid it has. Some gumbos are real liquidy while others I had are mad thick.

I’m just going by what’s stated as the difference between soups and stews. It’s generally said that stews are usually NtThick while soups are usually thinner and have a lot more liquid, but they can also be thick
