Half a watermelon, cut into 1 inch cubes
A handful of Fresh Mint leaves, torn into small pieces
Onion, quick pickled with vinegar, salt, sugar
A quarter cup of crumbled feta cheese
A healthy drizzle of your favorite olive oil
An equal amount of balsamic vinegar
Salt and pepper to taste
