it's actually good! i like how the fries aren't super soggy even when drenched in the sauces. it's pricey though.

Oh what? What's the mobile food scene like in MPLS? I know in LA & Bay Area that the competition is stiff, and if your name isn't already established, it's difficult to sneak into an already saturated business. What are your margins looking like?

Stiff as hell man. Plus we only have till November. We have to fight for spots everyday we go down town since food trucks can't park till 9 am we have to circle like sharks and jockey for the best spot. Food trucks hit each other a lot.
The margins are good, we've definitely done some dumb **** though. Like forgot to save money for taxes, then just had way less money than we thought. A lot of learning man. I've cooked in a lot of places, seen restaurants start from the ground up and been on the ground floor. So that REALLY helped me. But the actual truck game is new to me. It's fun though and I like that you can change your clientele by where you park.
People don't know who I am as a cook. They know we're not playing though so the unknown name isn't a problem. Plus my boy killed the branding so that really helps too I think. We constantly get compliments on it. The food scene here in general is insane, really really good cooks everywhere you turn and something new is always opening.
I got another good friend who helps me besides my partner. With him and my background we got a really broad spectrum of food so that gets people's attention too.
