Ok, I am going to use boneless/ skinless chicken thighs. Will that get the job done too?

You have to eat that with white rice.

A little piece is tasty and the white rice balances it out.
 
Just comparing recipies online. Seems like folks don't marinate the chicken in the mixture before cooking?

I don't marinate mine either. I mean, the meat is braising in the soy sauce and vinegar anyways. There really isn't much of a difference in taste if you do imo.

If i was preparing adobo for someone who never had it I would incorporate pork.
It gives it a fatty stickiness you can't get with just chicken.
Pork belly adobo is super tasty.
If u don't eat pork just disregard that.


Chicken is good too.
 
yes pork adobo is good especially with the pork belly... my pop makes it sometimes and sometimes he puts chicken in there too... but most of the time he makes chicken adobo... he doesnt marinate it... he just uses a whole chicken then cuts it up in very small pieces... comes out good but my only complain is too much bone... you can easily choke on a bone if you inhale your food lol... i agree have to eat it with white rice its the only way... i prefer to have sauce in my adobo so when you eat it with rice you can put some sauce on the white rice... but thats just me... would love to try dry adobo one time just to say i had it
 
Yea, I don't really do pork outside of ribs/pepperoni.

Looking forward to making it. Realizing that stewed chicken dishes are up there for me

I put a TINY amount of sauce on the rice cuz it's so tasty.
