I don't know if you're an album or song type of guy, but I prefer to hear individual songs from an artist before I listen to their catalog (call it thecures of the MP3 generation), but I'll put you on to a few non hip-hop artists that I listen to.

these are all songs to check out, the genres in parentheses can be classified loosely

("Acid Jazz") Jamiroquai- Everyday, Space Cowboy, Manifest Destiny, Morning Glory, Canned Heat

("Electronica") Zero 7- Destiny.....Portishead- Lot More....The Busy Singals- Autopilot

albums to check out

("Jazz")- Herbie Hancock- Sunlight...Jaspects- The Polkadotted Stripe....Ramp- Come Into Knowledge....Toshiyuki Honda- Burnin Waves

you NEED these 2 guys in your ipod

The Cure - Seventeen Seconds
Prince - Dirty Mind
Paul & Linda McCartney - Ram
The Last Shadow Puppets - The Age of the Understatement
The Stone Roses - The Stone Roses

Throw some metal in there to switch it up..
Few artist/album recs (kept to a minimum)..

Iron Maiden - "Seventh Son of a Seventh Son", "Killers", "Number of the Beast"
Death - "Leprosy" & "Sound of Perseverance"
Testament - "Practice what You Preach", "The Ritual"(tracks like "Electric Crown", "Lies","Agony"), "Souls of Black"
Judas Priest - "Screaming for Vengeance"
Children of Bodom - "Hate Crew Deathroll"
Pantera - "Vulgar of Display of Power"

I have a lot of hip-hop as well but I definitely try to keep it balanced out far as music library goes..
