I have the unlimited plan that at&t used to offer. What I'm wondering though, is if I get an iPhone, will I still have the unlimited plan, or will it change to the 2GB data plan?

Assuming you are on a blackberry or some other PDA, and you have the unlimited data plan
it will be grandfathered once you upgrade to your new iPhone, meaning you will still keep unlimited

get your iphone without letting AT&T know (meaning get it somewhere other than the AT&T store or website if you wanna keep things as they are) and also avoid calling them or giving them your IMEI number if you don't want em to start charging you iphone rates instead of charging you what you really signed up for

actually, do the exact opposite of this ^^^ and you'll be fine. do you have a smartphone/PDA now? if you do, you're good. definitely go into a store, i've had issues where people get it from the website and it defaults them to the 2GB/$25 data plan and want us to fix it.... and I direct them back where they spent their money since it wasn't with me.
and I say do the opposite because they'll know what phone you're using and will charge you data @ the per-use rate THEN add the data plan. if you had a non-smart phone, you're stuck with the 200mb/$15 or the aforementioned rate.
