The term "African American" seems a little much. Americans with Italian, Irish or Swedish backgrounds aren't commonly called European Americans. For some odd reason the term "African American" is looked at as the most polite way to describe a black person with African roots born in America.

All those things you named are not the same. A hispanic can be white or black. An American can be Mexican ethnically.
I don't know, do your research and ask some white friends. I get a sense of people thinking it's degrading because you are referring to someone based on a color that's not accurate at all(Asians being called yellow, native Americans called ********). Doesn't apply for all of course because we obviously call people white all of the time, but it doesn't have a negative stigma like the color black might to some.What's so bad about saying "black"?
