I watched the first episode of Hajime yesterday.
It seems cool so I'll keep watching.

I forgot to mention Hajime no Ippo and.....
GOLGO 13, he takes a dump on all the J.B.'s: 007, Jack Baurer, and Jason Bourne.

...and Solid Snake, and Sam Fisher and Triple X and anyone else you can think of.
GOLGO is the man, so mad that anime is only 50 eps, cause it was soooo damn good.

Cowboy Bebop is number 1 for me. Anything else just comes in second. 
Some that I like:

HunterxHunter (Best shonen series, I think it's superior to anything out there)

Planetes (Great Story and best ending for an anime)

Death Note (Instantly got me hooked)

Naruto (The first arc was definitely the best)

Bleach (Very interesting concept)

Hajime no Ippo (Love boxing so this was a must watch)

FMA (Yeah definitely a great series, liked the anime storyline more then the manga)

Eva (One of the first that I watched, still trips me out to this day and for such a dramatic series some of the humor in the beginning is just classic)

FLCL (Loved everything about this, from the story, animation, music, it was just the perfect OVA)

Kenshin Series and OVA (Big fan of the series and a huge fan of the OVA, disappointed the final act didn't get animated)

Ghost in the Shell 

GTO (Funniest series on this list)

Read or Die series and OVA (Great concept, just thinking about all the cool things Yomiko could do)

Trigun (Loved the inner conflict of Vash, just some really great story development)
