Would it be wise to change from a rewards card to a cashback card?
I've had my current card for 11 months now, should i wait a full year before changing?
I hear cashback cards exclude a lot of things?
Any recommendations for a good cashback card?

Just get a new one and don't use the old one for a while wait for it to expire. I thought cancelling a credit card before expiration was bad for your credit score.
