Nah it's mostly the producers will say don't talk about this. For example during the Tyson roast, I think they said don't talk about his rape or jail time.

The roaster still could and just say screw it but it will be cut from the broadcast. Like ludacris had told them no Paul walker jokes but they still made them

Most roastees have topics that are off limit.  Pamela Anderson  prohibited jokes about her Hepatitis C  infection. Joan Rivers  disallowed jokes about her daughter, Melissa.  Hasselhoff  had no limits on the topics.  Charlie Sheen  had jokes about his mother to be edited out of the broadcast.

Lenny Clarke, a friend of Leary's, said there was a carton of cigarettes backstage from Bill Hicks  with the message, "Wish I had gotten these to you sooner."  This joke was removed from the live broadcast.  This was a great joke.

Hannibal Buress had a joke removed from the Bieber roast. "They say that you roast the ones you love, but I don't like you at all, man. I'm just here because it's a real good opportunity for me," Buress deadpanned during the taping. "Actually you should thank me for participating in this extremely transparent attempt to be more likable in the public eye. And I hope it doesn't work."

The joke never made it on air. So Buress tweeted it out.
