Yeah I know, but I started to poach the scallops in water and when they were done I just didn't really like the texture of "raw" scallops. So I sauteed them in a bit of garlic and butter then I made the ceviche, refridgerated it for an hour to let it marinate and what now. Then I actually put it back in the skillet, heated it up a bit and served it warm over a bed of rice and corn on a tostada. I actually really enjoyed it, it wasn't traditional by any means, but the scallops were much better IMO.
