Yeah I know, but I started to poach the scallops in water and when they were done I just didn't really like the texture of "raw" scallops. So I sauteed them in a bit of garlic and butter then I made the ceviche, refridgerated it for an hour to let it marinate and what now. Then I actually put it back in the skillet, heated it up a bit and served it warm over a bed of rice and corn on a tostada. I actually really enjoyed it, it wasn't traditional by any means, but the scallops were much better IMO.
yea i don't know how raw scallops would be... i know they can be used it just doesn't sound good like you said.

i used to smash mad ceviche at my old job though.

Yeah if I made it with shrimp, I would just poach it though. Scallops are mushy if not cooked in my opinion.

If you leave the scallops in the lime juice long enough they get firm but then their flavor gets lost in the powerful citrus taste.
I've never liked ceviche though, I wouldn't turn it down if someone offered it to me but I would never make it for dinner
