The corn beef and cabbage thing was from Irish immigrants and they just had it cuz they were poor and it was a cheap meal at the time

In certain parts of Ireland they have something similar but it's boiled bacon and cabbage. It's not bacon the way we know it in America. Think of just a similar cut of pork and it's cooked in a pot into a soup/stew kind of thing.

In Ireland it's just what they call a bank holiday. People are off from work so they congregate at the pubs the same as any other day off, but they don't go crazy drinking themselves to death. You'll see a few touristy pubs in Dublin getting into the whole, green beer, dress up in shamrocks and party thing but not really much in the rest of the country.
