Vegetable pot pie.

My son was a junior counselor last week for a day camp at a working farm, so brought home a different kind of fruit or vegetable each day. Trying to figure out ways to use it all. The pot pie has carrots and potatoes he brought home.

Now working on figuring out what to do with a **** ton of beets...borscht time?

Honestly had no idea beet are this big out of the ground. That bag of beets weighs at least 5 pounds. LOL.

Oven roasted root vegetables ( beets, sweet potatoes, carrots).

Dice and drizzle in some form of fat (butter, ghee, coconut oil, your choice) with some fresh thyme & rosemary.

Oof.

^^^ Yeah, I was looking at a recipe for oven roasted beets with a Balsamic glaze...but I got so many, I’ll try the Rosemary and Thyme too.
