Overnight in plain water to desalinate.
Sat in a dry rub for a day.

2.5 hours in. Little mad the ribs split away from the roast, but it's all good. First time doing a bone in rib roast on the grill myself. I brought one for my bro to cook at Christmas and it was a hit, so trying to see what I can do.
Got another in the freezer for round 2 as well...
Checking the temp, I probably got another 30-60 to go.

Yesterday’s cook was a success. Turkey breast was the star of the show for me. Bone in pork chops, Carolina gold beans and smoked green beans (not pictured) were all outstanding too.

Finally got to try franklins in Austin and the brisket is worth the hype. Insane flavor. The ribs were pretty good and everything else was meh, including sides.
